Almond Cookie Recipe

-- dairy free, egg free, gluten free, vegetarian

 

[Ingredients]

1/4 cup maple syrup (Natural Sweetener)

1/3 cup coconut oil

2 cups almond flour

1 tbsp vanilla extract (Organic)

½ tsp baking soda

Cinnamon (to taste)

 


[Directions]

• Pre-heat oven to 350OC

• Place parchment paper over cookie sheet

• Melt coconut oil in pan on stovetop

• Combine wet ingredients into a bowl and mix well

• Add almond flour and baking soda to bowl and combine all ingredients. Stir.

• Scoop mixture onto cookie sheet into 1-inch balls

• Use back of spoon to flatten balls

• Sprinkle cinnamon on top of cookies

• Place in oven for 10 minutes

• Enjoy!

 

These sweet-treat almond cookies are perfect for curling up on the couch with an afternoon tea and a good book. They’re a great alternative to the traditional white flour, sugar, and processed cookies we find in the grocery store. They’re quick and easy to make with minimal clean up!
